Ground turkey breast makes a low fat breakfast sausage. 

  • Nonstick cooking spray - canola oil
  • 1 slightly beaten large egg white
  • 1/4 cup finely snipped dried apples or 1/2 cup finely chopped fresh apple
  • 3 tablespoons quick-cooking oats
  • 3 tablespoons snipped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 8 ounces lean ground turkey breast

Lightly coat a large skillet with cooking spray; set aside. 

Combine all ingredients except for turkey in a medium bowl. Add turkey; mix well. Shape mixture into eight 2-inch-diameter patties. 

Heat skillet over medium heat. Cook patties 10 to 12 minutes or until meat is no longer pink and juices run clear, turning once. Drain off grease. 

Makes 8 servings.
