• 2 cups rice flour
  • 1/2 cup natural peanut butter
  • 1 cup pumpin puree (low in sugar)
  • 2 eggs (up to 3 for more moisture)
  • 1  1/2 teaspoons cinnamon



Preheat oven to 350 degrees Fahrenheit. 


Mix ingredients together until blended. 


Spread dough to 1/4 inch thick and cut into desired cookie shapes or simple 1 inch squares. 


Place on a cookie sheet and bake for 10-15 minutes. 


Remove from oven and let cool before serving. Store in refrigerator for up to 7 days.
